Courgettes stir-fried with oyster sauce

Easy, simple courgette dish done in 15 minutes

Tip: Pick and use small, young courgettes for stir-fries. before they develop large seeds and become spongey.


2-3 small courgettes, sliced

1 tbsp vegetable oil

2 garlic cloves, sliced

1/2 medium chilli, sliced (optional)

1 tbsp oyster sauce + approx. 1 tbsp water

Good pinch of salt & pepper


  1. Heat wok over medium-high heat. Add oil.

  2. Add courgettes, fry for 2-3 minutes. Add garlic, chilli, salt, pepper. Fry for further 2 mins until courgettes are golden and just softened.

  3. Add oyster sauce and water. Add more water if wok is too dry (adding a little at a time). Toss to coat. Fry for further 30 seconds.

My top choice for oyster sauce/vegetarian flavoured oyster sauce is by Lee Kum Kee.
